Ingredients
- 4 boneless skinless chicken breasts, about 6 ounces each and 1 inch thick
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded Monterey Jack cheese
- 1 medium tomato, diced
- ¼ cup chopped red onion
- 2 tablespoons chopped cilantro
- 3 ripe avocados
- 2 tablespoons lime juice
- ¼ cup finely chopped red onion
- 2 tablespoons chopped cilantro
- ½ teaspoon salt
Instructions
- In a small bowl, mix olive oil, lime juice, garlic powder, paprika, salt, and black pepper. Rub evenly over the chicken breasts.
- Preheat grill to medium high heat. Lightly oil the grates.
- Grill chicken for 6 to 7 minutes per side until grill marks form and the chicken is cooked through.
- Ensure the chicken reaches an internal temperature of 165 degrees for safe consumption.
- During the last 2 minutes of grilling, sprinkle Monterey Jack cheese over each piece and close the lid to melt.
- In a bowl, mash avocados with lime juice until mostly smooth. Stir in chopped red onion, cilantro, and salt.
- Remove chicken from the grill and let it rest for 5 minutes.
- Top each chicken breast with diced tomato and a generous spoonful of guacamole.
- Garnish with additional cilantro if desired and serve immediately.
