Description
Juicy grilled chicken topped with creamy avocado, fresh tomato, and melted cheese. An easy and flavorful summer dinner.
Ingredients
- 4 boneless skinless chicken breasts, about 6 ounces each and 1 inch thick
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 cup shredded mozzarella cheese
- 2 ripe avocados, sliced
- 1 cup diced tomatoes
- 1/4 cup thinly sliced red onion
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon fresh lime juice
Instructions
- Preheat a grill or grill pan to medium-high heat, about 400°F. Lightly oil the grates.
- Pat the chicken breasts dry and brush with olive oil. Season evenly with salt, pepper, garlic powder, and paprika.
- Place the chicken on the grill and cook for 6 to 7 minutes per side, until grill marks form and the chicken is nearly cooked through.
- Sprinkle mozzarella cheese evenly over each chicken piece during the last 2 minutes of cooking. Close the lid to help the cheese melt.
- Continue grilling until the chicken reaches an internal temperature of 165°F.
- While the chicken cooks, combine diced tomatoes, red onion, cilantro, and lime juice in a bowl.
- Remove the chicken from the grill and let it rest for 3 to 5 minutes.
- Top each piece with sliced avocado and the tomato mixture.
- Serve immediately.
Notes
- Choose ripe but firm avocados so they hold their shape when sliced.
