Description

Juicy grilled chicken topped with creamy avocado, fresh tomato, and melted cheese. An easy and flavorful summer dinner.


Ingredients

  • 4 boneless skinless chicken breasts, about 6 ounces each and 1 inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup shredded mozzarella cheese
  • 2 ripe avocados, sliced
  • 1 cup diced tomatoes
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice


Instructions

  1. Preheat a grill or grill pan to medium-high heat, about 400°F. Lightly oil the grates.
  2. Pat the chicken breasts dry and brush with olive oil. Season evenly with salt, pepper, garlic powder, and paprika.
  3. Place the chicken on the grill and cook for 6 to 7 minutes per side, until grill marks form and the chicken is nearly cooked through.
  4. Sprinkle mozzarella cheese evenly over each chicken piece during the last 2 minutes of cooking. Close the lid to help the cheese melt.
  5. Continue grilling until the chicken reaches an internal temperature of 165°F.
  6. While the chicken cooks, combine diced tomatoes, red onion, cilantro, and lime juice in a bowl.
  7. Remove the chicken from the grill and let it rest for 3 to 5 minutes.
  8. Top each piece with sliced avocado and the tomato mixture.
  9. Serve immediately.

  • Choose ripe but firm avocados so they hold their shape when sliced.
