Description
Layer Greek yogurt with crunchy cereal and fresh winter berries for a protein-packed breakfast ready in 5 minutes. This is a perfect grab-and-go meal for busy mornings.
Ingredients
- 2 cups plain Greek yogurt (full-fat or 2%)
- 2 tablespoons honey or maple syrup
- ½ teaspoon vanilla extract
- 1 cup fresh strawberries, diced
- ½ cup fresh blueberries
- ½ cup fresh raspberries
- ¼ cup pomegranate arils
- 1 cup granola or crunchy flake cereal
- 2 tablespoons sliced almonds
Instructions
- Whisk together Greek yogurt, honey, and vanilla extract in a medium bowl until smooth and well combined.
- Rinse all berries under cold water and pat dry with paper towels, then dice strawberries into small pieces.
- Combine all berries and pomegranate arils in a separate bowl and gently toss together.
- Spoon 3 tablespoons of the yogurt mixture into the bottom of each of 4 clear cups or jars.
- Add 2 tablespoons of the mixed berry layer on top of the yogurt in each cup.
- Sprinkle 2 tablespoons of granola or cereal over the berries in each cup.
- Repeat layering once more: yogurt, berries, then finish with a final layer of cereal and sliced almonds on top.
- Drizzle each cup with an additional teaspoon of honey if desired for extra sweetness.
- Serve immediately for maximum cereal crunch, or refrigerate covered for up to 8 hours keeping temperatures below 40°F.
Notes
- Replace fresh berries with thawed frozen mixed berries when fresh are not available.
- Use vanilla Greek yogurt instead of plain and skip the honey for a simpler prep.
