Description

These baked Greek meatball bowls are fresh, flavorful, and packed with protein. Juicy seasoned meatballs are paired with rice, crisp vegetables, and a creamy yogurt sauce for a balanced and satisfying meal.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 1 cup cooked rice
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion sliced
  • For the yogurt sauce: 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt


Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a bowl combine ground chicken, breadcrumbs, egg, garlic, oregano, salt, black pepper, and parsley. Mix until just combined.
  3. Form into small meatballs and place on the prepared baking sheet.
  4. Bake for 18 to 20 minutes until cooked through and lightly golden.
  5. In a small bowl mix Greek yogurt, lemon juice, garlic powder, and salt to make the sauce.
  6. Assemble bowls with cooked rice, baked meatballs, cucumber, cherry tomatoes, and red onion.
  7. Drizzle with yogurt sauce and serve.

Notes

  • Cook ground chicken to an internal temperature of 165°F for safe consumption.
  • For extra flavor, chill the meatball mixture for 10 minutes before shaping.
