Healthy Mediterranean-inspired bowls with seasoned chicken, rice, fresh vegetables, and tzatziki sauce.
Ingredients
- 1 1/2 pounds boneless skinless chicken breasts
- 2 tablespoons olive oil, divided
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 3 cups cooked brown rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 cup shredded romaine lettuce
- 1/4 cup sliced red onion
- 1/3 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- For the tzatziki sauce:
- 1 cup plain Greek yogurt
- 1/2 cup finely grated cucumber, squeezed dry
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 tablespoon chopped fresh dill
- 1/4 teaspoon salt
Instructions
- In a small bowl, mix together oregano, garlic powder, paprika, 3/4 teaspoon salt, and black pepper.
- Rub the chicken breasts with 1 tablespoon olive oil and coat evenly with the seasoning mixture.
- Heat a large skillet over medium heat. Cook the chicken for 5 to 7 minutes per side until golden brown and the internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes, then slice into strips.
- In a medium bowl, stir together the Greek yogurt, grated cucumber, lemon juice, garlic, dill, and remaining salt to make the tzatziki sauce.
- Divide the cooked brown rice among serving bowls.
- Top each bowl with sliced chicken, cherry tomatoes, cucumber, romaine lettuce, red onion, and feta cheese.
- Drizzle with tzatziki sauce and garnish with fresh parsley before serving.
Notes
- For easy meal prep, store the tzatziki sauce separately and assemble the bowls just before serving.
