Description

Healthy Mediterranean-inspired bowls with seasoned chicken, rice, fresh vegetables, and tzatziki sauce.


Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 3 cups cooked brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup shredded romaine lettuce
  • 1/4 cup sliced red onion
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • For the tzatziki sauce:
  • 1 cup plain Greek yogurt
  • 1/2 cup finely grated cucumber, squeezed dry
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh dill
  • 1/4 teaspoon salt


Instructions

  1. In a small bowl, mix together oregano, garlic powder, paprika, 3/4 teaspoon salt, and black pepper.
  2. Rub the chicken breasts with 1 tablespoon olive oil and coat evenly with the seasoning mixture.
  3. Heat a large skillet over medium heat. Cook the chicken for 5 to 7 minutes per side until golden brown and the internal temperature reaches 165°F.
  4. Let the chicken rest for 5 minutes, then slice into strips.
  5. In a medium bowl, stir together the Greek yogurt, grated cucumber, lemon juice, garlic, dill, and remaining salt to make the tzatziki sauce.
  6. Divide the cooked brown rice among serving bowls.
  7. Top each bowl with sliced chicken, cherry tomatoes, cucumber, romaine lettuce, red onion, and feta cheese.
  8. Drizzle with tzatziki sauce and garnish with fresh parsley before serving.

Notes

  • For easy meal prep, store the tzatziki sauce separately and assemble the bowls just before serving.
