Description

These Greek chicken meatballs are juicy, flavorful, and baked to perfection. An easy Mediterranean-style dinner with fresh herbs and garlic.


Ingredients

  • 1 1/2 pounds ground chicken
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 1/3 cup finely chopped red onion
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley finely chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup plain Greek yogurt sauce
  • 1 tablespoon olive oil


Instructions

  1. Heat oven to 400°F and line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, panko, egg, red onion, garlic, parsley, oregano, cumin, salt, and black pepper until just mixed.
  3. Roll the mixture into 18 to 20 meatballs about 1 1/2 inches wide and place evenly on the baking sheet.
  4. Brush or drizzle meatballs lightly with olive oil.
  5. Bake for 18 to 22 minutes until lightly golden and cooked through to an internal temperature of 165°F.
  6. Remove from the oven and rest for 3 minutes before serving.
  7. Serve warm with Greek yogurt sauce and a drizzle of olive oil.
