Ingredients
- 1.5 pounds boneless skinless chicken thighs cut into 1 inch pieces
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 2 teaspoons dried oregano
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1 half teaspoon black pepper
- 1 tablespoon lemon juice
- 1 cup long grain white rice
- 2 cups water
- 1 half teaspoon salt
- 1 cup plain Greek yogurt
- 1 half cucumber finely grated and squeezed dry
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 clove garlic finely minced
- 1 half teaspoon salt
- 1 cup cherry tomatoes halved
- 1 cup diced cucumber
- 1 half cup thinly sliced red onion
- 1 cup shredded romaine lettuce
Instructions
- Rinse the rice under cold water until the water runs clear. Combine rice, water, and salt in a saucepan and bring to a boil over medium high heat.
- Reduce heat to low, cover, and cook for 18 minutes until the water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- In a bowl, mix olive oil, garlic, oregano, paprika, cumin, salt, black pepper, and lemon juice. Add the chicken pieces and toss to coat evenly.
- Heat a large skillet over medium high heat. Add the chicken in a single layer and cook for 10 to 12 minutes, stirring occasionally, until browned and cooked through.
- Ensure the chicken reaches an internal temperature of 165 degrees Fahrenheit for safe consumption.
- While the chicken cooks, prepare the yogurt sauce by combining Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, and salt in a bowl. Stir until smooth.
- Prepare the vegetables by halving the tomatoes, dicing the cucumber, slicing the red onion, and shredding the lettuce.
- Assemble bowls by adding a base of rice, then topping with cooked chicken, tomatoes, cucumber, red onion, and lettuce.
- Drizzle generously with yogurt sauce and serve immediately.
