Description

Ingredients

  • 1.5 pounds boneless skinless chicken thighs cut into 1 inch pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 half teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 cup long grain white rice
  • 2 cups water
  • 1 half teaspoon salt
  • 1 cup plain Greek yogurt
  • 1 half cucumber finely grated and squeezed dry
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic finely minced
  • 1 half teaspoon salt
  • 1 cup cherry tomatoes halved
  • 1 cup diced cucumber
  • 1 half cup thinly sliced red onion
  • 1 cup shredded romaine lettuce


Instructions

  1. Rinse the rice under cold water until the water runs clear. Combine rice, water, and salt in a saucepan and bring to a boil over medium high heat.
  2. Reduce heat to low, cover, and cook for 18 minutes until the water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  3. In a bowl, mix olive oil, garlic, oregano, paprika, cumin, salt, black pepper, and lemon juice. Add the chicken pieces and toss to coat evenly.
  4. Heat a large skillet over medium high heat. Add the chicken in a single layer and cook for 10 to 12 minutes, stirring occasionally, until browned and cooked through.
  5. Ensure the chicken reaches an internal temperature of 165 degrees Fahrenheit for safe consumption.
  6. While the chicken cooks, prepare the yogurt sauce by combining Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, and salt in a bowl. Stir until smooth.
  7. Prepare the vegetables by halving the tomatoes, dicing the cucumber, slicing the red onion, and shredding the lettuce.
  8. Assemble bowls by adding a base of rice, then topping with cooked chicken, tomatoes, cucumber, red onion, and lettuce.
  9. Drizzle generously with yogurt sauce and serve immediately.
