Ingredients

  • lbs chicken breast, cut into bite-size pieces
  • ½ cup plain Greek yogurt
  • 2 tbsp lemon juice

  • ½ tsp paprika
  • Salt and pepper, to taste
  • 1 cup plain Greek yogurt
  • 1 small cucumber, grated and moisture removed
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp fresh dill or parsley
  • Salt and pepper, to taste
  • 2 cups cooked rice, quinoa, or orzo
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, diced
  • ½ cup kalamata olives
  • ½ cup feta cheese, crumbled


Instructions

  1. Combine yogurt, lemon juice, olive oil, garlic, oregano, paprika, salt, and pepper. Coat chicken well and marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat and cook chicken until golden and fully cooked, about 4–5 minutes per side.
  3. Combine yogurt, cucumber, lemon juice, garlic, dill, salt, and pepper. Mix well and chill.
  4. Divide the grains between 4 bowls. Top with cooked chicken, tomatoes, cucumber, red onion, olives, and feta. Drizzle with tzatziki sauce.
