Ingredients
- 1½ lbs chicken breast, cut into bite-size pieces
- ½ cup plain Greek yogurt
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- ½ tsp paprika
- Salt and pepper, to taste
- 1 cup plain Greek yogurt
- 1 small cucumber, grated and moisture removed
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tbsp fresh dill or parsley
- Salt and pepper, to taste
- 2 cups cooked rice, quinoa, or orzo
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup red onion, diced
- ½ cup kalamata olives
- ½ cup feta cheese, crumbled
Instructions
- Combine yogurt, lemon juice, olive oil, garlic, oregano, paprika, salt, and pepper. Coat chicken well and marinate for at least 30 minutes.
- Heat a skillet over medium-high heat and cook chicken until golden and fully cooked, about 4–5 minutes per side.
- Combine yogurt, cucumber, lemon juice, garlic, dill, salt, and pepper. Mix well and chill.
- Divide the grains between 4 bowls. Top with cooked chicken, tomatoes, cucumber, red onion, olives, and feta. Drizzle with tzatziki sauce.
