Greek Chicken Bowls with Tzatziki

Description

Juicy marinated chicken, fresh vegetables, rice, and creamy homemade tzatziki sauce make these Greek chicken bowls a delicious and healthy meal.


Ingredients

  • 1 1/4 pounds boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 2 cups cooked rice
  • 2 cups halved cherry tomatoes
  • 2 cups diced cucumber
  • 4 cups chopped romaine lettuce
  • 1 cup thinly sliced red onion
  • 1/2 cup crumbled feta cheese
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1 tablespoon chopped fresh dill


Instructions

  1. In a medium bowl, whisk together the olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes.
  2. Pound the chicken breasts to an even 1/2 inch thickness and place them in a shallow dish or sealed bag.
  3. Pour the marinade over the chicken and refrigerate for at least 1 hour.
  4. In another bowl, stir together the Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, salt, and fresh dill to make the tzatziki sauce. Refrigerate until ready to serve.
  5. Preheat the air fryer to 380 degrees F.
  6. Remove the chicken from the marinade and place it in the air fryer basket in a single layer.
  7. Cook the chicken for 7 minutes, flip, and cook for another 3 to 4 minutes until the internal temperature reaches 165 degrees F.
  8. Let the chicken rest for 5 minutes before slicing into strips.
  9. Divide the cooked rice among 4 serving bowls.
  10. Top each bowl with romaine lettuce, cherry tomatoes, cucumber, red onion, sliced chicken, and feta cheese.
  11. Spoon the tzatziki sauce over the bowls and serve immediately.

Notes

  • For extra flavor, cook the rice in vegetable broth and finish it with a squeeze of lemon juice before assembling the bowls.
