Juicy marinated chicken, fresh vegetables, rice, and creamy homemade tzatziki sauce make these Greek chicken bowls a delicious and healthy meal.
Ingredients
- 1 1/4 pounds boneless skinless chicken breasts
- 1/4 cup olive oil
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 2 tablespoons honey
- 1 teaspoon garlic powder
- 1 1/2 teaspoons dried oregano
- 1 1/2 teaspoons dried basil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
- 2 cups cooked rice
- 2 cups halved cherry tomatoes
- 2 cups diced cucumber
- 4 cups chopped romaine lettuce
- 1 cup thinly sliced red onion
- 1/2 cup crumbled feta cheese
- 1 cup plain Greek yogurt
- 1/2 cup grated cucumber
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 1/4 teaspoon salt
- 1 tablespoon chopped fresh dill
Instructions
- In a medium bowl, whisk together the olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes.
- Pound the chicken breasts to an even 1/2 inch thickness and place them in a shallow dish or sealed bag.
- Pour the marinade over the chicken and refrigerate for at least 1 hour.
- In another bowl, stir together the Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, salt, and fresh dill to make the tzatziki sauce. Refrigerate until ready to serve.
- Preheat the air fryer to 380 degrees F.
- Remove the chicken from the marinade and place it in the air fryer basket in a single layer.
- Cook the chicken for 7 minutes, flip, and cook for another 3 to 4 minutes until the internal temperature reaches 165 degrees F.
- Let the chicken rest for 5 minutes before slicing into strips.
- Divide the cooked rice among 4 serving bowls.
- Top each bowl with romaine lettuce, cherry tomatoes, cucumber, red onion, sliced chicken, and feta cheese.
- Spoon the tzatziki sauce over the bowls and serve immediately.
Notes
- For extra flavor, cook the rice in vegetable broth and finish it with a squeeze of lemon juice before assembling the bowls.
