Description
Prepare a fresh Greek chicken bowl featuring lemon-marinated chicken, herbed rice, crisp vegetables, and creamy tzatziki sauce. This meal is ready quickly and works well for meal prepping.
Ingredients
- 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked basmati or jasmine rice
- 1 cup chopped cucumber
- 1 cup halved cherry tomatoes
- 1/4 cup sliced red onion
- 1/4 cup Kalamata olives, sliced
- 1/3 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 1/4 cup grated cucumber
- 1 small clove garlic, minced
- 1 teaspoon lemon juice
- 1 teaspoon chopped fresh dill
- Pinch of salt
Instructions
- Whisk olive oil, lemon juice, oregano, garlic powder, paprika, salt, and black pepper in a medium bowl. Add chicken pieces and toss to coat. Let marinate for 10 minutes.
- Heat a large skillet over medium-high heat. Add the chicken and cook 5 to 6 minutes per side, or until golden brown and cooked through to 165°F. Remove from heat and rest for 3 minutes.
- While chicken cooks, mix yogurt, grated cucumber, garlic, lemon juice, dill, and a pinch of salt in a small bowl to make tzatziki. Chill until serving.
- Divide warm rice between bowls. Top each with chicken, cucumber, tomatoes, red onion, olives, and feta.
- Spoon tzatziki over the top or serve it on the side.
- Garnish with extra dill or a drizzle of olive oil if you want.
