Description

Prepare a fresh Greek chicken bowl featuring lemon-marinated chicken, herbed rice, crisp vegetables, and creamy tzatziki sauce. This meal is ready quickly and works well for meal prepping.


Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked basmati or jasmine rice
  • 1 cup chopped cucumber
  • 1 cup halved cherry tomatoes
  • 1/4 cup sliced red onion
  • 1/4 cup Kalamata olives, sliced
  • 1/3 cup crumbled feta cheese
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated cucumber
  • 1 small clove garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon chopped fresh dill
  • Pinch of salt


Instructions

  1. Whisk olive oil, lemon juice, oregano, garlic powder, paprika, salt, and black pepper in a medium bowl. Add chicken pieces and toss to coat. Let marinate for 10 minutes.
  2. Heat a large skillet over medium-high heat. Add the chicken and cook 5 to 6 minutes per side, or until golden brown and cooked through to 165°F. Remove from heat and rest for 3 minutes.
  3. While chicken cooks, mix yogurt, grated cucumber, garlic, lemon juice, dill, and a pinch of salt in a small bowl to make tzatziki. Chill until serving.
  4. Divide warm rice between bowls. Top each with chicken, cucumber, tomatoes, red onion, olives, and feta.
  5. Spoon tzatziki over the top or serve it on the side.
  6. Garnish with extra dill or a drizzle of olive oil if you want.
