Description
These glazed apple scones are tender, bakery style scones filled with fresh apples and finished with a warm spiced vanilla glaze. They are soft, packed with sweet apple pieces, and easy to make.
Ingredients
- 1/3 cup granulated sugar
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 1/4 teaspoons apple pie spice
- 1/2 teaspoon salt
- 8 tablespoons unsalted butter very cold and grated
- 1/2 cup vanilla yogurt
- 1 large egg
- 1 tablespoon milk
- 1 teaspoon vanilla extract
- 1 large tart apple peeled, cored, and diced small
- 3 tablespoons unsalted butter melted (for glaze)
- 1 cup powdered sugar (for glaze)
- 1/2 teaspoon apple pie spice (for glaze)
- 1 teaspoon vanilla extract (for glaze)
- 1 tablespoon milk plus more as needed (for glaze)
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together the sugar, flour, baking powder, baking soda, apple pie spice, and salt.
- Add the grated cold butter and use your fingers to work it into the flour until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the yogurt, egg, milk, and vanilla extract.
- Add the wet ingredients to the flour mixture and stir just until large clumps form.
- Gently fold in the diced apple, then press the dough together into a soft ball.
- Transfer the dough to a lightly floured surface and pat into a 7 inch circle about 3/4 inch thick.
- Cut into 8 wedges and place them 1 inch apart on the prepared baking sheet.
- Bake for 15 to 17 minutes until golden brown. Cool for 10 minutes.
- Whisk together the melted butter, powdered sugar, apple pie spice, vanilla extract, and milk until smooth for the glaze.
- Dip the tops of the warm scones into the glaze and allow it to set before serving.
