Description
A rich and moist German Chocolate Pound Cake topped with a decadent coconut-pecan frosting.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 2 ½ cups granulated sugar
- 4 large eggs, at room temperature
- 4 oz German’s Sweet Chocolate, melted and slightly cooled
- 2 ½ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 1 cup buttermilk
- 1 tsp pure vanilla extract
- ½ cup sour cream
- 1 cup evaporated milk
- 1 cup granulated sugar
- 3 large egg yolks, beaten
- ½ cup unsalted butter
- 1 ½ cups sweetened shredded coconut
- 1 cup chopped pecans
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 325°F (163°C). Grease and flour a 10-inch bundt pan. Cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then mix in the melted chocolate until smooth.
- In a separate bowl, sift together the flour, baking soda, and salt. Gradually add the dry ingredients to the chocolate mixture, alternating with buttermilk. Finish by stirring in the vanilla extract and sour cream.
- Pour the batter into your prepared pan. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
- In a medium saucepan, cook the evaporated milk, sugar, egg yolks, and butter over medium heat, stirring constantly until it thickens (about 10-12 minutes). Remove from the heat and stir in the coconut, pecans, and vanilla. Let it cool until it’s thick enough to spread.
- Once the cake is completely cool, spread the delicious coconut-pecan frosting over the top, letting it drip down the sides.
Notes
- Ensure eggs and butter are at room temperature for best results.
- Melt the German’s Sweet Chocolate and let it cool slightly before adding to the batter.
- The cake is done when a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before frosting.
