A hearty one-pan dinner with juicy steak, crispy potatoes, and rich herb butter flavor.
Ingredients
- 1 tablespoon olive oil
- 1 pound Yukon gold potatoes, cut into 1/2 inch cubes
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 1/4 pounds sirloin steak, cut into 1 inch cubes
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh oregano
- 1 tablespoon chopped parsley
Instructions
- Heat a large cast iron skillet over medium-high heat and add the olive oil.
- Add the cubed Yukon gold potatoes, garlic powder, salt, and black pepper. Spread the potatoes into an even layer.
- Cook the potatoes for 5 minutes without stirring to help them brown. Stir and continue cooking for 12 to 15 minutes, stirring occasionally, until the potatoes are golden and fork-tender.
- Transfer the potatoes to a plate and carefully wipe excess crumbs from the skillet if needed.
- Increase the heat to high. Add the steak cubes to the hot skillet in a single layer and season with salt and black pepper.
- Sear the steak for 1 minute without moving, then stir and continue cooking for 3 to 4 minutes for medium doneness. The steak should reach an internal temperature of 145 degrees F.
- Reduce the heat to medium and add the butter, minced garlic, thyme, rosemary, and oregano. Stir continuously for 1 minute until fragrant.
- Return the cooked potatoes to the skillet and toss everything together until evenly coated in the garlic herb butter.
- Sprinkle chopped parsley over the skillet and serve immediately.
- Refrigerate leftovers within 2 hours and reheat thoroughly before serving again.
Notes
- For the best sear, avoid overcrowding the skillet and cook the steak in batches if needed.
- Serve with roasted vegetables or a crisp salad for a complete meal.
