Description

A hearty one-pan dinner with juicy steak, crispy potatoes, and rich herb butter flavor.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound Yukon gold potatoes, cut into 1/2 inch cubes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 1/4 pounds sirloin steak, cut into 1 inch cubes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh oregano
  • 1 tablespoon chopped parsley


Instructions

  1. Heat a large cast iron skillet over medium-high heat and add the olive oil.
  2. Add the cubed Yukon gold potatoes, garlic powder, salt, and black pepper. Spread the potatoes into an even layer.
  3. Cook the potatoes for 5 minutes without stirring to help them brown. Stir and continue cooking for 12 to 15 minutes, stirring occasionally, until the potatoes are golden and fork-tender.
  4. Transfer the potatoes to a plate and carefully wipe excess crumbs from the skillet if needed.
  5. Increase the heat to high. Add the steak cubes to the hot skillet in a single layer and season with salt and black pepper.
  6. Sear the steak for 1 minute without moving, then stir and continue cooking for 3 to 4 minutes for medium doneness. The steak should reach an internal temperature of 145 degrees F.
  7. Reduce the heat to medium and add the butter, minced garlic, thyme, rosemary, and oregano. Stir continuously for 1 minute until fragrant.
  8. Return the cooked potatoes to the skillet and toss everything together until evenly coated in the garlic herb butter.
  9. Sprinkle chopped parsley over the skillet and serve immediately.
  10. Refrigerate leftovers within 2 hours and reheat thoroughly before serving again.

Notes

  • For the best sear, avoid overcrowding the skillet and cook the steak in batches if needed.
  • Serve with roasted vegetables or a crisp salad for a complete meal.
