Description
Crispy garlic parmesan roasted red potatoes with golden edges and tender centers. This is a simple, flavorful side dish ready in about 40 minutes.
Ingredients
- 3 pounds red potatoes, scrubbed and cut into 1-inch cubes
- ¼ cup olive oil
- 6 cloves garlic, finely minced
- ¾ cup freshly grated parmesan cheese, divided
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- 2 tablespoons unsalted butter, melted
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 400°F and line a large baking sheet with parchment paper.
- In a large bowl, toss potatoes with olive oil, minced garlic, ½ cup parmesan cheese, salt, pepper, and smoked paprika until evenly coated.
- Spread the potatoes in a single layer, cut side down, on the prepared baking sheet. Sprinkle with the remaining parmesan.
- Roast for 25 to 30 minutes, flipping halfway through, until golden brown and tender.
- Remove from oven and drizzle with melted butter. Toss gently to coat.
- Transfer to a serving dish and sprinkle with chopped parsley before serving.
Notes
- For extra crispness, let the roasted potatoes rest on the baking sheet for 3 minutes before serving.
