Ingredients
- For the Meatloaf
- 1 1/2 pounds ground beef 85 percent lean
- 1/2 cup finely diced yellow onion
- 4 garlic cloves minced
- 1 tablespoon olive oil
- 1 cup freshly grated Parmesan cheese
- 3/4 cup plain breadcrumbs
- 1/2 cup whole milk
- 2 large eggs
- 1 1/2 teaspoons Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- For the Creamy Parmesan Sauce
- 2 tablespoons unsalted butter
- 2 garlic cloves minced
- 2 tablespoons all purpose flour
- 1 1/2 cups whole milk
- 3/4 cup freshly grated Parmesan cheese
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 375 degrees F. Lightly grease a loaf pan or line a baking sheet with parchment paper.
- Heat olive oil in a small skillet over medium heat. Add diced onion and cook for 3 to 4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant. Remove from heat and let cool slightly.
- In a large bowl, combine ground beef, grated Parmesan, breadcrumbs, milk, eggs, Italian seasoning, salt, and black pepper. Add the cooled onion and garlic mixture. Mix gently until just combined.
- Shape the mixture into a loaf and place in the prepared pan.
- Bake for 45 to 55 minutes until the internal temperature reaches 160 degrees F and the top is lightly browned.
- Remove from the oven and let rest for 10 minutes before slicing.
- While the meatloaf rests, melt butter in a saucepan over medium heat. Add minced garlic and cook for 30 seconds. Whisk in flour and cook for 1 minute.
- Slowly pour in milk while whisking continuously. Simmer for 4 to 5 minutes until thickened. Stir in Parmesan cheese, salt, and black pepper until smooth.
- Slice the meatloaf and spoon the warm creamy Parmesan sauce over each serving. Sprinkle with chopped parsley before serving.
