Description

Juicy ground beef meatloaf with garlic and Parmesan, topped with a rich creamy Parmesan sauce. A comforting family dinner.


Ingredients

  • For the Meatloaf
  • 1 1/2 pounds ground beef 85 percent lean
  • 1/2 cup finely diced yellow onion
  • 4 garlic cloves minced
  • 1 tablespoon olive oil
  • 1 cup freshly grated Parmesan cheese
  • 3/4 cup plain breadcrumbs
  • 1/2 cup whole milk
  • 2 large eggs
  • 1 1/2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • For the Creamy Parmesan Sauce
  • 2 tablespoons unsalted butter
  • 2 garlic cloves minced
  • 2 tablespoons all purpose flour
  • 1 1/2 cups whole milk
  • 3/4 cup freshly grated Parmesan cheese
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. Heat olive oil in a small skillet over medium heat. Add diced onion and cook for 3 to 4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant. Remove from heat and let cool slightly.
  3. In a large bowl, combine ground beef, grated Parmesan, breadcrumbs, milk, eggs, Italian seasoning, salt, and black pepper. Add the cooled onion and garlic mixture. Mix gently until just combined.
  4. Shape the mixture into a loaf and place in the prepared pan.
  5. Bake for 45 to 55 minutes until the internal temperature reaches 160 degrees F and the top is lightly browned.
  6. Remove from the oven and let rest for 10 minutes before slicing.
  7. While the meatloaf rests, melt butter in a saucepan over medium heat. Add minced garlic and cook for 30 seconds. Whisk in flour and cook for 1 minute.
  8. Slowly pour in milk while whisking continuously. Simmer for 4 to 5 minutes until thickened. Stir in Parmesan cheese, salt, and black pepper until smooth.
  9. Slice the meatloaf and spoon the warm creamy Parmesan sauce over each serving. Sprinkle with chopped parsley before serving.
