Description
Garlic Parmesan chicken and potatoes roasted together on one pan for an easy, flavorful weeknight dinner ready in 45 minutes.
Ingredients
- For the Chicken: 4 boneless skinless chicken breasts (6 ounces each, about 1 inch thick), 1 tablespoon olive oil, 1 teaspoon Italian seasoning, 1/2 teaspoon smoked paprika, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper
- For the Potatoes: 1 1/2 pounds baby Yukon Gold potatoes (halved), 3 tablespoons olive oil, 4 garlic cloves (minced), 1/3 cup finely grated Parmesan cheese, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper, 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 400 degrees F. Line a large sheet pan with parchment paper.
- In a bowl, toss the chicken with olive oil, Italian seasoning, smoked paprika, salt, and black pepper until evenly coated.
- In a separate bowl, toss the halved potatoes with olive oil, minced garlic, Parmesan cheese, salt, and black pepper until well coated.
- Arrange the chicken on one side of the sheet pan. Spread the potatoes cut side down on the other side in a single layer, leaving space between pieces for even browning.
- Roast for 30 to 35 minutes until the chicken reaches an internal temperature of 165 degrees F and the potatoes are tender and golden brown.
- If needed, broil for 2 to 3 minutes at the end to deepen the color on the potatoes. Watch closely to prevent burning.
- Remove from the oven and let the chicken rest for 5 minutes. Sprinkle chopped parsley over the potatoes before serving.
