Ingredients

  • 2 pounds russet potatoes peeled and cut into 0.75-inch cubes
  • 2 tablespoons olive oil
  • 0.75 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.75 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 1.25 pounds boneless skinless chicken breasts cut into 1-inch cubes
  • 2 tablespoons butter
  • 0.75 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons minced garlic
  • 0.5 cup creamy garlic parmesan sauce
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon dried parsley


Instructions

  1. Preheat the air fryer to 400°F. Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
  2. Air fry potatoes for 22 to 25 minutes, shaking the basket every 7 to 8 minutes, until fork-tender and crispy.
  3. While the potatoes cook, heat a large skillet over medium-high heat and add butter.
  4. Add chicken to the skillet and season with salt, pepper, paprika, onion powder, and Italian seasoning. Cook for 6 to 8 minutes, stirring occasionally, until fully cooked and lightly browned.
  5. Add minced garlic and cook for 30 seconds until fragrant. Stir in the garlic parmesan sauce until the chicken is evenly coated.
  6. Add the cooked potatoes to the skillet and gently stir to combine.
  7. Sprinkle mozzarella cheese evenly over the top. Cover with a lid and cook for 2 to 3 minutes until the cheese is melted.
  8. Remove from heat, sprinkle with dried parsley, and serve hot.

Notes

  • For extra crisp potatoes, avoid overcrowding the air fryer basket.
