Ingredients
- 2 pounds russet potatoes peeled and cut into 0.75-inch cubes
- 2 tablespoons olive oil
- 0.75 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 0.75 teaspoon garlic powder
- 0.5 teaspoon paprika
- 1.25 pounds boneless skinless chicken breasts cut into 1-inch cubes
- 2 tablespoons butter
- 0.75 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 tablespoons minced garlic
- 0.5 cup creamy garlic parmesan sauce
- 1 cup shredded mozzarella cheese
- 1 tablespoon dried parsley
Instructions
- Preheat the air fryer to 400°F. Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- Air fry potatoes for 22 to 25 minutes, shaking the basket every 7 to 8 minutes, until fork-tender and crispy.
- While the potatoes cook, heat a large skillet over medium-high heat and add butter.
- Add chicken to the skillet and season with salt, pepper, paprika, onion powder, and Italian seasoning. Cook for 6 to 8 minutes, stirring occasionally, until fully cooked and lightly browned.
- Add minced garlic and cook for 30 seconds until fragrant. Stir in the garlic parmesan sauce until the chicken is evenly coated.
- Add the cooked potatoes to the skillet and gently stir to combine.
- Sprinkle mozzarella cheese evenly over the top. Cover with a lid and cook for 2 to 3 minutes until the cheese is melted.
- Remove from heat, sprinkle with dried parsley, and serve hot.
Notes
- For extra crisp potatoes, avoid overcrowding the air fryer basket.
- Chicken is safe to eat when the thickest pieces reach an internal temperature of 165°F.
