Description

Garlic lemon baked chicken breast with tender steamed broccoli. A light, protein-packed dinner that’s fresh and flavorful.


Ingredients

  • For the Chicken
  • 2 boneless skinless chicken breasts (6 ounces each, about 1 inch thick)
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 3 garlic cloves, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • For the Broccoli
  • 4 cups broccoli florets (cut into even bite size pieces)
  • 1/4 teaspoon kosher salt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon olive oil


Instructions

  1. Preheat your oven to 400 degrees F. Lightly grease a small baking dish with olive oil.
  2. Pat the chicken breasts dry with paper towels and place them in the baking dish.
  3. In a small bowl, whisk together 1 tablespoon olive oil, 2 tablespoons lemon juice, lemon zest, minced garlic, salt, black pepper, and paprika.
  4. Spoon the mixture evenly over the chicken breasts, turning to coat both sides. Let sit at room temperature for 10 minutes while the oven finishes heating.
  5. Bake uncovered for 22 to 26 minutes until the thickest part of each breast reaches an internal temperature of 165 degrees F and the juices run clear. For 1 inch thick breasts, 24 minutes is typically perfect.
  6. While the chicken bakes, bring 1 inch of water to a boil in a medium pot fitted with a steamer basket. Add the broccoli, cover, and steam for 5 to 6 minutes until bright green and fork tender.
  7. Transfer broccoli to a bowl and toss with 1 teaspoon olive oil, 1 tablespoon lemon juice, and 1/4 teaspoon salt.
  8. Remove the chicken from the oven and let rest for 5 minutes before slicing. Serve warm with the steamed broccoli.
