Description
Garlic lemon baked chicken breast with tender steamed broccoli. A light, protein-packed dinner that’s fresh and flavorful.
Ingredients
- For the Chicken
- 2 boneless skinless chicken breasts (6 ounces each, about 1 inch thick)
- 1 tablespoon olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 3 garlic cloves, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- For the Broccoli
- 4 cups broccoli florets (cut into even bite size pieces)
- 1/4 teaspoon kosher salt
- 1 tablespoon fresh lemon juice
- 1 teaspoon olive oil
Instructions
- Preheat your oven to 400 degrees F. Lightly grease a small baking dish with olive oil.
- Pat the chicken breasts dry with paper towels and place them in the baking dish.
- In a small bowl, whisk together 1 tablespoon olive oil, 2 tablespoons lemon juice, lemon zest, minced garlic, salt, black pepper, and paprika.
- Spoon the mixture evenly over the chicken breasts, turning to coat both sides. Let sit at room temperature for 10 minutes while the oven finishes heating.
- Bake uncovered for 22 to 26 minutes until the thickest part of each breast reaches an internal temperature of 165 degrees F and the juices run clear. For 1 inch thick breasts, 24 minutes is typically perfect.
- While the chicken bakes, bring 1 inch of water to a boil in a medium pot fitted with a steamer basket. Add the broccoli, cover, and steam for 5 to 6 minutes until bright green and fork tender.
- Transfer broccoli to a bowl and toss with 1 teaspoon olive oil, 1 tablespoon lemon juice, and 1/4 teaspoon salt.
- Remove the chicken from the oven and let rest for 5 minutes before slicing. Serve warm with the steamed broccoli.
