Description

This garlic cauliflower mushroom skillet is a quick one pan vegetable dish packed with bold garlic flavor and tender sautéed vegetables.


Ingredients

  • 1 medium head cauliflower cut into small florets
  • 12 ounces fresh mushrooms sliced
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat olive oil and butter in a large skillet over medium heat until melted.
  2. Add cauliflower florets and cook 6 to 7 minutes, stirring occasionally, until lightly golden.
  3. Add mushrooms and onion to the skillet and cook 5 minutes until softened.
  4. Stir in garlic, thyme, smoked paprika, salt, and black pepper. Cook 1 to 2 minutes until fragrant.
  5. Continue cooking until vegetables are tender but not mushy, about 3 minutes more.
  6. Remove skillet from heat and drizzle with lemon juice.
  7. Toss gently and garnish with fresh parsley before serving.
