Description
This garlic cauliflower mushroom skillet is a quick one pan vegetable dish packed with bold garlic flavor and tender sautéed vegetables.
Ingredients
- 1 medium head cauliflower cut into small florets
- 12 ounces fresh mushrooms sliced
- 1 medium yellow onion diced
- 3 cloves garlic minced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1/2 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil and butter in a large skillet over medium heat until melted.
- Add cauliflower florets and cook 6 to 7 minutes, stirring occasionally, until lightly golden.
- Add mushrooms and onion to the skillet and cook 5 minutes until softened.
- Stir in garlic, thyme, smoked paprika, salt, and black pepper. Cook 1 to 2 minutes until fragrant.
- Continue cooking until vegetables are tender but not mushy, about 3 minutes more.
- Remove skillet from heat and drizzle with lemon juice.
- Toss gently and garnish with fresh parsley before serving.

- Cook over medium heat to avoid burning the garlic while allowing vegetables to brown.
