Ingredients
- 1 pound beef sirloin cut into bite size pieces
- 1 pound baby potatoes halved
- 2 tablespoons olive oil
- 1 teaspoon salt divided
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 3 tablespoons butter
- 4 cloves garlic minced
- 1 tablespoon chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium heat. Add potatoes cut side down and season with 1/2 teaspoon salt and black pepper. Cook for 10 to 12 minutes, stirring occasionally, until golden and tender. Remove and set aside.
- Increase heat to medium high. Add steak pieces and season with remaining 1/2 teaspoon salt and paprika. Sear for 2 to 3 minutes per side until browned and cooked to desired doneness.
- Reduce heat to medium and add butter and garlic. Stir for 1 to 2 minutes until fragrant.
- Return potatoes to the skillet and toss with the steak and garlic butter.
- Sprinkle with fresh parsley and serve immediately.
Notes
- Cook steak to an internal temperature of 145°F with a 3 minute rest for safe consumption.
