Description

Garlic butter honey BBQ chicken tacos with juicy chicken, sweet smoky sauce, and fresh toppings. A quick 30 minute dinner.


Ingredients

  • 1 pound boneless skinless chicken thighs trimmed
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 3 garlic cloves minced
  • 2 tablespoons honey
  • 1/2 cup thick BBQ sauce
  • 1 tablespoon fresh lemon juice
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup finely diced red onion
  • 2 tablespoons chopped fresh cilantro
  • Lime wedges


Instructions

  1. Pat the chicken thighs dry and toss with olive oil, paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
  2. Heat a large skillet over medium high heat. Add the chicken in a single layer and cook for 5 to 6 minutes per side until golden brown and the internal temperature reaches 165 degrees F. Transfer to a cutting board and let rest for 5 minutes.
  3. In the same skillet, reduce heat to medium. Melt the butter and add minced garlic. Cook for 30 seconds until fragrant.
  4. Stir in honey, BBQ sauce, and lemon juice. Simmer for 2 to 3 minutes until slightly thickened and glossy.
  5. Slice the rested chicken into strips and return to the skillet. Toss well to coat in the sauce and simmer for 1 to 2 minutes.
  6. Warm the tortillas in a dry skillet for about 30 seconds per side until soft and pliable.
  7. Fill each tortilla with shredded lettuce, saucy chicken, shredded cheese, red onion, and cilantro.
  8. Serve immediately with lime wedges for squeezing over the top.
