Description
Garlic butter honey BBQ chicken tacos with juicy chicken, sweet smoky sauce, and fresh toppings. A quick 30 minute dinner.
Ingredients
- 1 pound boneless skinless chicken thighs trimmed
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 3 tablespoons unsalted butter
- 3 garlic cloves minced
- 2 tablespoons honey
- 1/2 cup thick BBQ sauce
- 1 tablespoon fresh lemon juice
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup finely diced red onion
- 2 tablespoons chopped fresh cilantro
- Lime wedges
Instructions
- Pat the chicken thighs dry and toss with olive oil, paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
- Heat a large skillet over medium high heat. Add the chicken in a single layer and cook for 5 to 6 minutes per side until golden brown and the internal temperature reaches 165 degrees F. Transfer to a cutting board and let rest for 5 minutes.
- In the same skillet, reduce heat to medium. Melt the butter and add minced garlic. Cook for 30 seconds until fragrant.
- Stir in honey, BBQ sauce, and lemon juice. Simmer for 2 to 3 minutes until slightly thickened and glossy.
- Slice the rested chicken into strips and return to the skillet. Toss well to coat in the sauce and simmer for 1 to 2 minutes.
- Warm the tortillas in a dry skillet for about 30 seconds per side until soft and pliable.
- Fill each tortilla with shredded lettuce, saucy chicken, shredded cheese, red onion, and cilantro.
- Serve immediately with lime wedges for squeezing over the top.
