Description
Make soft, buttery Funfetti cookies in under 25 minutes with this easy, no-chill recipe. These cookies are tender due to cornstarch and packed with rainbow sprinkles.
Ingredients
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg, room temperature
- 1 1/2 cups all-purpose flour
- 1 tablespoon cornstarch
- 1/2 teaspoon baking soda
- 1/4 teaspoon fine sea salt
- 1/2 cup rainbow sprinkles (jimmies), plus 2 tablespoons for rolling
Instructions
- Preheat the oven to 350°F and line two large baking sheets with parchment paper.
- Cream the softened butter and granulated sugar in a large bowl on medium-high speed for 3 to 4 minutes until very pale and fluffy.
- Add the egg to the butter mixture and beat on medium speed until fully incorporated and smooth.
- Whisk the all-purpose flour, cornstarch, baking soda, and salt together in a separate medium bowl.
- Pour the dry ingredients into the wet mixture and mix on low speed just until combined and no flour pockets remain.
- Fold in the 1/2 cup of rainbow sprinkles gently with a rubber spatula to avoid crushing them.
- Scoop the dough into 1.5-tablespoon portions and roll them into balls between your palms.
- Press the tops of the dough balls into the remaining 2 tablespoons of sprinkles for a decorative finish.
- Place the balls 2 inches apart on the prepared baking sheets.
- Bake for 8 to 10 minutes, or until the edges are set and the centers remain soft and puffy.
- Allow the cookies to cool on the baking sheet for 5 minutes to set before transferring them to a wire rack.
