Description
These funfetti sandwich cookies are soft, colorful, and filled with creamy buttercream. They are easy cookies made from cake mix, perfect for parties.
Ingredients
- 1 box funfetti style cake mix 15.25 ounces
- 1 large egg
- 4 ounces cream cheese softened
- ¼ cup unsalted butter melted and cooled
- ¾ cup rainbow sprinkles
- ½ cup unsalted butter softened (for filling)
- 2 cups powdered sugar
- ¾ teaspoon vanilla extract
- 1 to 2 tablespoons whole milk
Instructions
- Preheat your oven to 350°F. Line two baking sheets with parchment paper.
- Mix the cake mix, egg, cream cheese, and melted butter in a large bowl until a thick dough forms.
- Scoop and roll the dough into 1 inch balls. Roll each ball in the sprinkles to coat them completely.
- Place the dough balls on the prepared baking sheets. Gently press the tops to slightly flatten them.
- Bake for 9 to 11 minutes until the cookies set but remain soft.
- Move the cookies to a wire rack and let them cool completely.
- Beat the softened butter in a mixing bowl for 2 to 3 minutes until it looks pale and fluffy.
- Add the powdered sugar and vanilla extract. Beat on low speed until everything combines.
- Add the milk slowly, one tablespoon at a time, until the frosting reaches a smooth, spreadable consistency.
- Spread or pipe the frosting onto the flat side of half the cookies. Top with the remaining cookies to make the sandwiches.
Notes
- Let the cookies cool fully before filling so the buttercream does not melt.
