Description

Quick and easy Funfetti Cake Mix Cookies offer a celebratory treat made effortlessly from a box mix. These soft cookies pack all the fun of a birthday cake into a simple drop cookie format.

Ingredients

  • 1 box Vanilla or Funfetti cake mix
  • 1 teaspoon baking powder
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 cup sprinkles

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper or grease it with cooking spray.
  2. In a large mixing bowl, combine the cake mix and baking powder.
  3. In a separate small bowl, mix the eggs, oil, and vanilla extract.
  4. Add the wet mixture to the cake mixture. Stir until no white pockets of cake mix remain and the batter is smooth.
  5. Gently fold in the sprinkles, reserving a few for the topping.
  6. Use a mini ice-cream scooper to drop dough balls onto the prepared sheet, keeping them 1 inch apart.
  7. Top each cookie with the saved sprinkles.
  8. Bake for 9 to 12 minutes. Remember, they might look slightly underdone when you remove them.
  9. Transfer cookies to a cooling rack and allow them to cool for 10 minutes before you eat them.

Notes

  • You control the sprinkle level; one cup gives you a good balance between cookie and sprinkle.
  • Keep leftover cookies in an airtight container at room temperature for up to 7 days. They become crumbly after that time.
