Description

Instructions
- Line a 9×13-inch baking dish with parchment paper, leaving overhang on the sides for easy removal.
- Arrange 8 full graham cracker sheets (16 squares) in a single layer on the bottom of the prepared dish, breaking pieces to fit as needed.
- Rinse strawberries thoroughly, pat dry with paper towels, and chop finely into small pieces.
- Combine vanilla Greek yogurt, chopped strawberries, honey, and vanilla extract in a large bowl and stir until well mixed.
- Spread the strawberry yogurt mixture evenly over the graham crackers in the baking dish, smoothing the top with a spatula.
- Top with the remaining 8 graham cracker sheets (16 squares), arranging them in a single layer and pressing down gently to create sandwiches.
- Cover the baking dish tightly with plastic wrap or aluminum foil and freeze for at least 4 hours or overnight until completely firm.
- Remove from freezer and let sit at room temperature for 5 minutes to soften slightly before cutting.
- Use the parchment overhang to lift the frozen block out of the dish, then cut into 16 individual sandwich squares and store in the freezer at 0°F or below for food safety.
Notes
- Pat strawberries very dry after washing to prevent excess moisture from making sandwiches icy.
- Chop strawberries into small pieces so the filling spreads evenly and sandwiches cut cleanly.
