Description

Ingredients

  • 16 full graham cracker sheets (32 squares total)
  • 2 cups vanilla Greek yogurt
  • 1½ cups fresh strawberries, finely chopped

Instructions

  1. Line a 9×13-inch baking dish with parchment paper, leaving overhang on the sides for easy removal.
  2. Arrange 8 full graham cracker sheets (16 squares) in a single layer on the bottom of the prepared dish, breaking pieces to fit as needed.
  3. Rinse strawberries thoroughly, pat dry with paper towels, and chop finely into small pieces.
  4. Combine vanilla Greek yogurt, chopped strawberries, honey, and vanilla extract in a large bowl and stir until well mixed.
  5. Spread the strawberry yogurt mixture evenly over the graham crackers in the baking dish, smoothing the top with a spatula.
  6. Top with the remaining 8 graham cracker sheets (16 squares), arranging them in a single layer and pressing down gently to create sandwiches.
  7. Cover the baking dish tightly with plastic wrap or aluminum foil and freeze for at least 4 hours or overnight until completely firm.
  8. Remove from freezer and let sit at room temperature for 5 minutes to soften slightly before cutting.
