Description
This frozen cherry mint mocktail is bright, refreshing, and blended smooth with lime and fresh mint for a perfect summer drink.
Ingredients
- 1 pound frozen pitted cherries
- 3 cups crushed ice
- 1/2 cup fresh mint leaves packed
- 1 cup cold sparkling water
- 3/4 cup granulated sugar (for syrup)
- 3/4 cup water (for syrup)
- 3 limes juiced and finely zested (for syrup)
- Lime wedges (for serving)
- Fresh cherries (for serving)
Instructions
- Combine the sugar, water, lime juice, and lime zest in a small saucepan over medium heat.
- Bring to a gentle simmer and cook for 5 minutes, stirring occasionally, until the sugar is fully dissolved.
- Remove from heat and cool completely.
- Add the frozen cherries, crushed ice, mint leaves, sparkling water, and 1/2 cup of the cooled lime syrup to a high speed blender.
- Blend until smooth and slushy.
- Taste and add more lime syrup if a sweeter drink is desired.
- Pour into chilled glasses and garnish with lime wedges and fresh cherries. Serve immediately.
Notes
- Store leftover lime syrup covered in the refrigerator for up to 1 week.
