Light and fresh summer garden pasta with juicy tomatoes, basil, and garlic. An easy dinner for warm weather.
Ingredients
- 1 pound angel hair pasta
- 4 cups cherry tomatoes halved
- ½ cup fresh basil leaves torn
- ¼ cup olive oil
- 4 garlic cloves minced
- ¼ cup grated parmesan cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- In a large bowl, combine cherry tomatoes, olive oil, garlic, salt, and pepper. Stir well and let sit at room temperature for 30 minutes to release juices and develop flavor.
- Bring a large pot of salted water to a boil. Cook angel hair pasta according to package instructions until just tender. Reserve ½ cup pasta water, then drain.
- Add hot pasta directly to the bowl with the marinated tomatoes. Toss well so the heat gently softens the tomatoes into a light sauce. Add a splash of reserved pasta water if needed for a silky texture.
- Add fresh basil and grated parmesan. Toss until evenly combined and glossy.
- Serve immediately with extra parmesan on top if desired.
