Description

Bright and crunchy mango slaw with cabbage, lime, and sesame dressing. A quick healthy side dish ready in 15 minutes.


Ingredients

  • 2 ripe mangoes peeled and diced
  • 2 cups green cabbage finely shredded
  • 1 large carrot grated
  • 1 red bell pepper thinly sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 3 tablespoons fresh lime juice
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Add diced mango, shredded cabbage, grated carrot, sliced bell pepper, red onion, and cilantro to a large mixing bowl. Toss until evenly combined.
  2. In a small bowl, whisk together lime juice, honey, sesame oil, salt, and black pepper until smooth and well blended.
  3. Pour the dressing over the slaw mixture. Gently toss until all ingredients are evenly coated.
  4. Let the slaw rest for 5 minutes to allow flavors to come together.
  5. Serve chilled or at room temperature.

Notes

  • For extra texture, add chopped roasted nuts or seeds just before serving.
