Description

Crisp romaine, cucumbers, and cherry tomatoes tossed in a zesty lemon herb dressing. A fresh, customizable garden salad that’s perfect for spring meals.


Ingredients

  • 3 heads romaine lettuce, chopped
  • 1 English cucumber, diced
  • 1 small red onion, thinly sliced
  • 1 cup shredded carrots
  • 1 pint cherry tomatoes, halved
  • ½ cup homemade or store-bought croutons
  • ¼ cup grated parmesan cheese (optional)
  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper


Instructions

  1. Wash and chop the romaine lettuce. Soak red onion slices in ice water for 5 minutes to reduce sharpness, then drain.
  2. Dice cucumber and halve cherry tomatoes. Add all vegetables to a large mixing bowl.
  3. In a small jar or bowl, whisk together olive oil, lemon juice, mustard, garlic, parsley, oregano, salt, and pepper until emulsified.
  4. Just before serving, drizzle dressing over the vegetables. Toss well to coat evenly.
  5. Sprinkle croutons and parmesan cheese over the top for crunch and flavor.
  6. Serve immediately as a side dish or top with grilled chicken or chickpeas for a complete meal.
