Ingredients
- 2 cups all-purpose flour
- 3 tbsp sugar
- 1 tbsp baking powder
- 1 tsp kosher salt
- 5 tbsp cold butter, cubed
- 1/2 cup chopped walnuts
- 1 cup fresh figs, quartered
- 2 tbsp brown sugar
- 1 tsp cinnamon
- 1/2 cup buttermilk
- 1/4 cup heavy cream
- Topping: 1 tbsp cream + cinnamon sugar (optional)
Instructions
- Heat oven to 425°F. Line a baking sheet with parchment.
- Toss quartered figs with brown sugar and cinnamon. Chill in the freezer.
- In a large bowl, whisk flour, sugar, baking powder, and salt. Cut in butter until crumbly.
- Stir in walnuts, then gently fold in chilled figs. Freeze mixture for 10 minutes.
- Make a well in the center. Pour in buttermilk and cream. Gently fold until dough just comes together.
- Turn dough onto a floured surface. Shape into a 12×3-inch log.
- Slice the log into 8 wedges. Place on the baking sheet.
- Brush the tops with cream and sprinkle with cinnamon sugar, if desired.
- Bake for 15–18 minutes, until golden and firm.
- Cool slightly and enjoy warm.
Notes
- These scones freeze well. Reheat them in the oven for a fresh-baked taste.
