Ingredients

  • 2 large cucumbers, sliced
  • 2 ripe avocados, diced
  • 1 fourth cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh cilantro
  • 1 half teaspoon salt
  • 1 half teaspoon black pepper


Instructions

  1. Combine sliced cucumbers, diced avocado, and red onion in a large bowl.
  2. Whisk together olive oil, lemon juice, chopped cilantro, salt, and black pepper in a small bowl.
  3. Pour the dressing over the salad and gently toss to combine without mashing the avocado.
