Description
This French onion pasta offers the deep, savory taste of classic onion soup in a simple pasta dish. It uses deeply caramelized onions and a creamy sauce that coats the pasta well.
Ingredients
- 12 ounces dry pasta such as fettuccine or rigatoni
- 3 large yellow onions thinly sliced
- 3 tablespoons olive oil
- 1 teaspoon kosher salt
- 2 tablespoons unsalted butter
- 2 cloves garlic minced
- 1 teaspoon dried thyme
- 2 tablespoons all-purpose flour
- 1 1/2 cups low-sodium beef broth
- 1/2 cup heavy cream
- 1/2 cup finely shredded Gruyere-style cheese
- 1/4 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1 cup pasta water and drain.
- Heat olive oil in a wide skillet over medium heat. Add onions and salt and cook 10 minutes until softened.
- Reduce heat to medium low and cook onions 30 to 40 minutes, stirring every few minutes, until deeply caramelized.
- Add butter and garlic and cook 30 seconds until fragrant.
- Sprinkle flour over onions and stir constantly for 1 minute.
- Slowly pour in beef broth while stirring, scraping the pan bottom until smooth and slightly thickened.
- Stir in cream, thyme, and black pepper and simmer 3 to 5 minutes until silky.
- Add pasta and toss to coat, adding reserved pasta water a little at a time if needed.
- Remove from heat and stir in shredded cheese until melted and glossy.
- Serve immediately while hot.
