Description

This baked yogurt is creamy, custard-like, and naturally sweetened. It is a healthy, high-protein breakfast or snack made with just 6 ingredients.


Ingredients

  • 2 cups Greek yogurt (2% plain recommended)
  • 4 large eggs
  • ¼ cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 3 tablespoons cornstarch
  • 1½ cups fresh berries, divided


Instructions

  1. Preheat oven to 350°F. Line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, whisk together yogurt, eggs, maple syrup, and vanilla until smooth.
  3. Add cornstarch and whisk again until fully combined.
  4. Fold in 1 cup of berries and gently mix.
  5. Pour the mixture into the prepared dish and scatter the remaining ½ cup berries on top.
  6. Bake 45 minutes or until the center is set and no longer jiggly.
  7. Cool almost completely before slicing into squares. Serve plain or with an extra drizzle of maple syrup if desired.
