Description
Soft and fluffy banana oat waffles made with oats instead of flour. These easy banana oat waffles are blender-made and perfect for breakfast.
Ingredients
- 1.75 cups old fashioned rolled oats
- 2 ripe bananas with brown spots
- 2 large eggs
- 0.67 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1.5 teaspoons ground cinnamon
- 1.5 teaspoons baking powder
- Nonstick cooking spray
Instructions
- Add rolled oats to a high-speed blender and blend for 20 seconds until they resemble coarse flour.
- Add bananas, eggs, almond milk, vanilla extract, cinnamon, and baking powder. Blend for 30 to 45 seconds until smooth.
- Let the batter rest for 5 minutes to thicken while preheating the waffle iron.
- Heat the waffle iron and lightly coat with nonstick cooking spray.
- Pour batter into the center of the waffle iron, using enough to just cover the grid without overflowing.
- Cook for 4 to 5 minutes until the waffles are golden brown and release easily from the iron.
- Remove waffles and rest for 1 minute before serving. Repeat with remaining batter.
