Description

Soft and fluffy banana oat waffles made with oats instead of flour. These easy banana oat waffles are blender-made and perfect for breakfast.


Ingredients

  • 1.75 cups old fashioned rolled oats
  • 2 ripe bananas with brown spots
  • 2 large eggs
  • 0.67 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1.5 teaspoons ground cinnamon
  • 1.5 teaspoons baking powder
  • Nonstick cooking spray


Instructions

  1. Add rolled oats to a high-speed blender and blend for 20 seconds until they resemble coarse flour.
  2. Add bananas, eggs, almond milk, vanilla extract, cinnamon, and baking powder. Blend for 30 to 45 seconds until smooth.
  3. Let the batter rest for 5 minutes to thicken while preheating the waffle iron.
  4. Heat the waffle iron and lightly coat with nonstick cooking spray.
  5. Pour batter into the center of the waffle iron, using enough to just cover the grid without overflowing.
  6. Cook for 4 to 5 minutes until the waffles are golden brown and release easily from the iron.
  7. Remove waffles and rest for 1 minute before serving. Repeat with remaining batter.
