Ingredients
- 3 large yellow onions thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 2 store-bought flatbreads about 8 to 9 inches each
- 1 cup shredded mozzarella cheese
- 4 ounces goat cheese crumbled
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a wide skillet over medium heat. Add onions and salt and cook 10 minutes until softened.
- Reduce heat to medium low and cook 30 to 40 minutes, stirring every few minutes, until onions are deep golden and jammy.
- Preheat oven to 400°F. Place flatbreads on a large baking sheet.
- Brush flatbreads lightly with olive oil.
- Sprinkle mozzarella evenly over each flatbread.
- Top with caramelized onions and crumbled goat cheese.
- Sprinkle thyme and black pepper evenly over the top.
- Bake 12 to 15 minutes until cheese is melted and edges are golden.
- Remove from oven, cool 2 minutes, slice, and serve warm.
