Description

This flatbread with caramelized onions is crisp, savory, and perfect for sharing. It is a simple oven-baked recipe ideal for lunch or dinner.


Ingredients

  • 3 large yellow onions thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 2 store-bought flatbreads about 8 to 9 inches each
  • 1 cup shredded mozzarella cheese
  • 4 ounces goat cheese crumbled
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Heat olive oil in a wide skillet over medium heat. Add onions and salt and cook 10 minutes until softened.
  2. Reduce heat to medium low and cook 30 to 40 minutes, stirring every few minutes, until onions are deep golden and jammy.
  3. Preheat oven to 400°F. Place flatbreads on a large baking sheet.
  4. Brush flatbreads lightly with olive oil.
  5. Sprinkle mozzarella evenly over each flatbread.
  6. Top with caramelized onions and crumbled goat cheese.
  7. Sprinkle thyme and black pepper evenly over the top.
  8. Bake 12 to 15 minutes until cheese is melted and edges are golden.
  9. Remove from oven, cool 2 minutes, slice, and serve warm.
