Adam here from NoobRecipes! Today, we’re making a moist, spiced Fig Bread, also known as Fig Cake. It’s packed with cozy fall flavors and perfect for breakfast or dessert. This recipe is designed for beginners, making it simple and stress-free to create a delicious treat.
Ingredients
- 2 cups all-purpose flour (plus extra for dusting)
- 1⅓ cups sugar
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp ground cloves
- ½ tsp ground nutmeg
- ½ tsp ground cardamom
- ½ tsp cinnamon
- ¼ tsp sea salt
- ½ cup vegetable oil
- ½ cup whole milk
- 3 large eggs, beaten
- 1 tsp vanilla extract
- 1 cup fresh figs, chopped (or thawed if frozen)
- ½ cup chopped walnuts or pecans
- 1 tbsp softened butter (for greasing pans)
Instructions
- Preheat your oven to 350°F.
- Grease and flour two loaf pans or one bundt pan with softened butter and a little flour.
- In a large bowl, stir together the flour, sugar, baking soda, baking powder, cloves, nutmeg, cardamom, cinnamon, and salt.
- Lightly crush your walnuts or pecans in a zip-top bag with a mallet or use a food processor. Stir them into the dry ingredients.
- In a separate bowl, whisk together the vegetable oil, milk, beaten eggs, vanilla extract, and chopped figs.
- Add the wet mixture to the dry ingredients. Stir gently just until combined. Be careful not to overmix.
- Pour your batter evenly into the prepared pans.
- Bake on the middle oven rack. This will take about 45 minutes for loaf pans or 1 hour for a bundt pan. Bake until the bread is golden brown and a toothpick inserted into the center comes out clean.
- Let the bread cool in the pans for 10 minutes. Then, carefully remove it from the pans. Allow it to cool completely on a wire rack before slicing.
Notes
- If you can’t find fresh figs, you can use thawed frozen figs.
- Ensure your ingredients are at room temperature for best results.
