Description

Tender boneless skinless chicken thighs simmered in a rich garlic cream sauce for an easy comforting meal perfect for busy weeknights.


Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt divided
  • 1/2 teaspoon black pepper
  • 3 cloves garlic minced
  • 1 cup low sodium chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 2 cups fresh spinach
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides with garlic powder, paprika, 3/4 teaspoon salt, and black pepper.
  2. Heat the olive oil in a large skillet over medium high heat.
  3. Add the chicken thighs and cook for 5 to 6 minutes per side until golden brown and the internal temperature reaches 165°F. Transfer to a plate.
  4. Reduce the heat to medium. Add the garlic and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the pan.
  6. Stir in the heavy cream, Parmesan cheese, thyme, and remaining salt. Simmer for 3 to 4 minutes until slightly thickened.
  7. Add the spinach and cook until wilted.
  8. Return the chicken thighs to the skillet and spoon the sauce over the top.
  9. Simmer for 2 to 3 minutes until heated through.
  10. Garnish with fresh parsley before serving.
