Ingredients
- 1 1/2 pounds boneless skinless chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt divided
- 1/2 teaspoon black pepper
- 3 cloves garlic minced
- 1 cup low sodium chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 2 cups fresh spinach
- 1 tablespoon chopped fresh parsley
Instructions
- Pat the chicken thighs dry with paper towels. Season both sides with garlic powder, paprika, 3/4 teaspoon salt, and black pepper.
- Heat the olive oil in a large skillet over medium high heat.
- Add the chicken thighs and cook for 5 to 6 minutes per side until golden brown and the internal temperature reaches 165°F. Transfer to a plate.
- Reduce the heat to medium. Add the garlic and cook for 30 seconds until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the pan.
- Stir in the heavy cream, Parmesan cheese, thyme, and remaining salt. Simmer for 3 to 4 minutes until slightly thickened.
- Add the spinach and cook until wilted.
- Return the chicken thighs to the skillet and spoon the sauce over the top.
- Simmer for 2 to 3 minutes until heated through.
- Garnish with fresh parsley before serving.
