Description
Quick and healthy sautéed mushrooms with spinach and garlic, finished with lemon for brightness—a perfect side or light main in under 30 minutes.
Ingredients
- 2 tablespoons olive oil
- 1 pound mushrooms, sliced (cremini or button)
- 4 cloves garlic, minced
- 4 cups fresh spinach
- 1 tablespoon fresh lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional garnish: fresh parsley or a pinch of red pepper flakes
Instructions
- Wash and dry mushrooms thoroughly, then slice evenly. Clean spinach and set aside.
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add mushrooms in a single layer and cook without stirring for 3–4 minutes to brown. Stir occasionally for another 5–7 minutes until tender and golden.
- Add garlic and sauté 1–2 minutes, stirring constantly so it does not burn.
- Add spinach and toss gently until wilted, about 2–3 minutes.
- Season with salt and pepper, then drizzle lemon juice over the mixture and toss again.
- Serve hot, garnished with parsley or red pepper flakes if desired.
Notes
- For a richer version, add a splash of cream just before serving to make the sauce silky.
