Description

Make fresh rice paper rolls with crisp veggies and light filling. These rolls are easy, healthy, and good for a refreshing meal or snack.


Ingredients

  • 8 rice paper wrappers
  • 1 cup cooked chicken fillets shredded
  • 1 cup lettuce shredded
  • 1 half cup carrots julienned
  • 1 half cup cucumber julienned
  • 1 quarter cup fresh herbs such as mint and cilantro
  • 2 tablespoons soy sauce for dipping sauce
  • 1 tablespoon honey for dipping sauce
  • 1 tablespoon lemon juice for dipping sauce
  • 1 teaspoon sesame oil for dipping sauce


Instructions

  1. Fill a shallow dish with warm water.
  2. Dip one rice paper wrapper into the water for a few seconds until softened.
  3. Place the wrapper on a clean surface.
  4. Add lettuce, chicken, carrots, cucumber, and herbs in the center.
  5. Fold the sides over the filling, then roll tightly to seal.
  6. Repeat with remaining wrappers and filling.
  7. In a small bowl, mix soy sauce, honey, lemon juice, and sesame oil.
  8. Serve the rolls with dipping sauce.

Notes

  • Do not soak the rice paper too long as it can become too soft and tear easily.
  • Serve fresh for the best texture.
