Description

A quick and simple homemade sauce perfect for any ravioli.


Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • ⅓ cup tomato paste
  • 1 cup low-sodium chicken stock
  • 1 (15-ounce) can diced tomatoes
  • 1 tablespoon sugar
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ⅓ cup heavy cream


Instructions

  1. In a medium pot, heat the olive oil over medium-high heat.
  2. Add the onions and garlic, and cook for 4-5 minutes until the onions are soft and translucent.
  3. Add the tomato paste and cook for 1 minute.
  4. Add the chicken stock, diced tomatoes, sugar, Italian seasoning, salt, and black pepper.
  5. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes.
  6. Stir in the heavy cream and cook for 2 more minutes.
  7. Serve with cooked ravioli.

Notes

  • This sauce is best served immediately.
  • For a richer flavor, you can simmer the sauce for an additional 10 minutes.
