Ingredients
- 1/4 cup chia seeds
- 1 cup unsweetened almond milk
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 cup raspberries plus extra for topping
- Sliced almonds for topping (optional)
- Shredded coconut for topping (optional)
Instructions
- Combine chia seeds, almond milk, maple syrup, and vanilla extract in a mixing bowl. Stir until evenly mixed.
- Let the mixture sit for 5 minutes, then stir again to prevent clumping.
- Lightly mash the raspberries with a fork and stir them into the mixture until evenly distributed.
- Cover and refrigerate for at least 2 hours or overnight until thick and creamy.
- Stir before serving and adjust texture with a splash of milk if needed.
- Divide into bowls or jars and top with extra raspberries or desired toppings.
