Ingredients
- 2 cups all-purpose flour
- 1 2/3 cups granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp ground cinnamon
- 1 tsp salt
- 1 cup unsalted butter, melted & cooled
- 4 eggs
- 1 (15 oz) can pumpkin puree or squash
- Frosting:
- 1 (8 oz) cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F and grease an 18×13-inch half sheet pan.
- In a large bowl, whisk flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix melted butter, eggs, and pumpkin puree until smooth.
- Stir wet mixture into dry ingredients just until combined—don’t overmix.
- Spread batter evenly into the prepared pan and bake 30-35 minutes, until a toothpick comes out clean. Cool completely.
- For the frosting, beat cream cheese, butter, and salt until creamy. Gradually add powdered sugar and vanilla, mixing until fluffy.
- Spread frosting over cooled bars, sprinkle lightly with cinnamon if desired, then cut into 24 squares.
Notes
- Swap the butter in the bars for 1 cup vegetable oil for an even moister texture.
