Ingredients

  • 2 cups all-purpose flour
  • 1 2/3 cups granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp salt
  • 1 cup unsalted butter, melted & cooled
  • 4 eggs
  • 1 (15 oz) can pumpkin puree or squash
  • Frosting:
  • 1 (8 oz) cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt


Instructions

  1. Preheat oven to 350°F and grease an 18×13-inch half sheet pan.
  2. In a large bowl, whisk flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix melted butter, eggs, and pumpkin puree until smooth.
  4. Stir wet mixture into dry ingredients just until combined—don’t overmix.
  5. Spread batter evenly into the prepared pan and bake 30-35 minutes, until a toothpick comes out clean. Cool completely.
  6. For the frosting, beat cream cheese, butter, and salt until creamy. Gradually add powdered sugar and vanilla, mixing until fluffy.
  7. Spread frosting over cooled bars, sprinkle lightly with cinnamon if desired, then cut into 24 squares.
