Description
Easy oven baked fries using russet potatoes and a hot broiler finish for crispness. These fries skip deep frying for a quick, family side dish.
Ingredients
- 3 large russet potatoes scrubbed
- 1 tablespoon salt
- 2 cups ice cold water
- ⅓ cup vegetable oil
- 1 teaspoon garlic salt
- 1 teaspoon dried oregano
- 1 teaspoon paprika
Instructions
- Cut the potatoes into evenly sized matchsticks about ¼ inch thick and rinse under cold water to remove surface starch.
- Stir the salt into the ice cold water in a large bowl, add the potatoes, and soak for 10 minutes.
- Drain the potatoes and pat them very dry with paper towels.
- Preheat the oven broiler to low and place the oven rack in the middle position.
- Pour the vegetable oil onto a large rimmed sheet pan and place it under the broiler for 2 to 3 minutes until the oil is hot but not smoking.
- Carefully remove the pan and spread the potatoes in a single layer over the hot oil.
- Sprinkle evenly with garlic salt, oregano, and paprika.
- Broil for 5 minutes until the bottoms are golden.
- Flip the fries and broil for another 4 to 5 minutes until golden brown and fork tender.
- Serve immediately while hot.

- These fries are best enjoyed fresh and hot from the oven.
