Description

Easy oven baked fries using russet potatoes and a hot broiler finish for crispness. These fries skip deep frying for a quick, family side dish.


Ingredients

  • 3 large russet potatoes scrubbed
  • 1 tablespoon salt
  • 2 cups ice cold water
  • ⅓ cup vegetable oil
  • 1 teaspoon garlic salt
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika


Instructions

  1. Cut the potatoes into evenly sized matchsticks about ¼ inch thick and rinse under cold water to remove surface starch.
  2. Stir the salt into the ice cold water in a large bowl, add the potatoes, and soak for 10 minutes.
  3. Drain the potatoes and pat them very dry with paper towels.
  4. Preheat the oven broiler to low and place the oven rack in the middle position.
  5. Pour the vegetable oil onto a large rimmed sheet pan and place it under the broiler for 2 to 3 minutes until the oil is hot but not smoking.
  6. Carefully remove the pan and spread the potatoes in a single layer over the hot oil.
  7. Sprinkle evenly with garlic salt, oregano, and paprika.
  8. Broil for 5 minutes until the bottoms are golden.
  9. Flip the fries and broil for another 4 to 5 minutes until golden brown and fork tender.
  10. Serve immediately while hot.
