Description

This easy Italian pasta salad contains crisp vegetables, tangy dressing, and strong flavor. It is ready in 25 minutes and suits meal prep or gatherings.


Ingredients

  • 8 ounces short pasta such as rotini or penne
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely diced
  • 1 cup bell pepper, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup Italian dressing
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley or basil, chopped


Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions, about 8 to 10 minutes.
  2. Drain the pasta and rinse under cold water until completely cooled. Set aside to drain well.
  3. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, bell pepper, and black olives. Toss gently to mix.
  4. In a small bowl, whisk together the Italian dressing, garlic powder, salt, and black pepper until smooth.
  5. Pour the dressing over the pasta mixture and toss until everything is evenly coated.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
  7. Before serving, toss again and garnish with fresh herbs if desired. Serve chilled.
