Description

A creamy chicken casserole with tender chicken, vegetables, and a buttery cracker topping, perfect for a comforting homemade dinner.


Ingredients

  • 3 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups crushed buttery crackers
  • 3 tablespoons unsalted butter melted


Instructions

  1. Preheat your oven to 375°F. Lightly grease a 9 x 13 inch baking dish.
  2. Heat the olive oil in a skillet over medium heat. Add the onion, carrots, and celery. Cook for 5 to 6 minutes until softened.
  3. Stir in the garlic and cook for 1 minute.
  4. In a large bowl, combine the cooked vegetables, shredded chicken, cream of chicken soup, sour cream, chicken broth, thyme, salt, black pepper, frozen peas, and cheddar cheese.
  5. Spread the mixture evenly into the prepared baking dish.
  6. In a medium bowl, stir together the crushed buttery crackers and melted butter.
  7. Sprinkle the cracker topping evenly over the casserole.
  8. Bake for 30 to 35 minutes until bubbly and golden brown.
  9. Let the casserole rest for 5 minutes before serving.
