Ingredients
- 3 cups cooked shredded chicken
- 1 tablespoon olive oil
- 1 small yellow onion diced
- 2 carrots diced
- 2 celery stalks diced
- 3 cloves garlic minced
- 1 can cream of chicken soup
- 1 cup sour cream
- 1/2 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups crushed buttery crackers
- 3 tablespoons unsalted butter melted
Instructions
- Preheat your oven to 375°F. Lightly grease a 9 x 13 inch baking dish.
- Heat the olive oil in a skillet over medium heat. Add the onion, carrots, and celery. Cook for 5 to 6 minutes until softened.
- Stir in the garlic and cook for 1 minute.
- In a large bowl, combine the cooked vegetables, shredded chicken, cream of chicken soup, sour cream, chicken broth, thyme, salt, black pepper, frozen peas, and cheddar cheese.
- Spread the mixture evenly into the prepared baking dish.
- In a medium bowl, stir together the crushed buttery crackers and melted butter.
- Sprinkle the cracker topping evenly over the casserole.
- Bake for 30 to 35 minutes until bubbly and golden brown.
- Let the casserole rest for 5 minutes before serving.
