Ingredients

  • 2 cups fresh or frozen blueberries
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon zest


Instructions

  1. Add the blueberries, water, sugar, and lemon juice to a medium saucepan over medium heat.
  2. Stir frequently and bring the mixture to a gentle boil.
  3. In a small bowl, whisk together the cornstarch and cold water until smooth.
  4. Slowly stir the cornstarch mixture into the blueberries. Avoid crushing the fruit.
  5. Reduce the heat to a simmer. Cook for about 5 minutes, stirring gently, until the sauce thickens and coats the back of a spoon.
  6. Remove from the heat. Stir in the vanilla extract and lemon zest.
