Description
Soft Greek yogurt flatbread cooked on the stovetop. This easy flatbread recipe is pillowy, quick to make, and perfect for wraps or dipping.
Ingredients
- 1 1/4 cups warm water
- 2 1/4 teaspoons active dry yeast
- 1 tablespoon granulated sugar
- 3/4 cup plain whole-milk Greek yogurt
- 2 tablespoons olive oil plus more for cooking
- 2 teaspoons kosher salt
- 3 3/4 cups all-purpose flour plus more for kneading
- 2 tablespoons finely chopped fresh parsley
Instructions
- In a large bowl, stir warm water, yeast, and sugar until combined, then rest for 5 to 8 minutes until foamy.
- Whisk in Greek yogurt, olive oil, and salt until smooth.
- Add flour and stir until a shaggy dough forms.
- Turn dough onto a floured surface and knead gently for 2 to 3 minutes, adding flour as needed until soft and no longer sticky.
- Divide dough into 10 equal portions, dust lightly with flour, cover, and rest for 15 minutes.
- Heat a nonstick skillet over medium-low heat.
- Roll one dough portion into a 7-inch circle and brush lightly with olive oil.
- Place dough oil-side down in the hot skillet, brush the top lightly with oil, and cook 60 to 90 seconds until bubbles form and the bottom has golden spots.
- Flip and cook 45 to 75 seconds more until lightly golden, then remove from the pan.
- Repeat with remaining dough, stacking cooked flatbreads in a clean towel and sprinkling with parsley before serving.

- Stacking the flatbreads while warm keeps them soft and flexible.
