Description

Soft Greek yogurt flatbread cooked on the stovetop. This easy flatbread recipe is pillowy, quick to make, and perfect for wraps or dipping.

Ingredients

  • 1 1/4 cups warm water
  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon granulated sugar
  • 3/4 cup plain whole-milk Greek yogurt
  • 2 tablespoons olive oil plus more for cooking
  • 2 teaspoons kosher salt
  • 3 3/4 cups all-purpose flour plus more for kneading
  • 2 tablespoons finely chopped fresh parsley

Instructions

  1. In a large bowl, stir warm water, yeast, and sugar until combined, then rest for 5 to 8 minutes until foamy.
  2. Whisk in Greek yogurt, olive oil, and salt until smooth.
  3. Add flour and stir until a shaggy dough forms.
  4. Turn dough onto a floured surface and knead gently for 2 to 3 minutes, adding flour as needed until soft and no longer sticky.
  5. Divide dough into 10 equal portions, dust lightly with flour, cover, and rest for 15 minutes.
  6. Heat a nonstick skillet over medium-low heat.
  7. Roll one dough portion into a 7-inch circle and brush lightly with olive oil.
  8. Place dough oil-side down in the hot skillet, brush the top lightly with oil, and cook 60 to 90 seconds until bubbles form and the bottom has golden spots.
  9. Flip and cook 45 to 75 seconds more until lightly golden, then remove from the pan.
  10. Repeat with remaining dough, stacking cooked flatbreads in a clean towel and sprinkling with parsley before serving.

Notes

  • Stacking the flatbreads while warm keeps them soft and flexible.
