Description
Fresh Greek pasta salad with feta, crisp vegetables, and zesty lemon dressing. A quick and healthy Mediterranean-inspired dish ready in 20 minutes.
Ingredients
- 12 ounces bow tie pasta
- ¼ cup olive oil
- 3 tablespoons fresh lemon juice
- 2 tablespoons red wine vinegar
- 2 teaspoons Dijon mustard
- 2 garlic cloves minced
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 cups cherry tomatoes halved
- 2 medium cucumbers chopped
- 1 red bell pepper diced
- ⅓ cup red onion finely chopped
- ⅓ cup black olives sliced
- ⅓ cup green olives sliced
- 4 ounces feta cheese crumbled
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until al dente. Drain and rinse under cold water to stop cooking. Set aside.
- In a large bowl, whisk together olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper until well combined.
- Add tomatoes, cucumbers, bell pepper, red onion, and olives to the bowl with the dressing. Toss to coat and let sit for a few minutes so flavors develop.
- Add cooled pasta and crumbled feta cheese to the bowl. Toss gently until everything is evenly mixed and coated.
- Serve immediately or chill for later. Taste and adjust seasoning before serving if needed.

- Rinse pasta with cold water to prevent it from becoming mushy.
