Ingredients
- 1 pound ground beef
- 3 garlic cloves, finely minced
- 1 small onion, finely minced
- 1/4 cup breadcrumbs
- 1 teaspoon baking soda
- 1/2 cup fresh parsley, finely chopped
- 2 tablespoons fresh mint, chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 medium potatoes, cut into wedges
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and squeezed dry
- 1 garlic clove, minced
- 1 tablespoon lemon juice
- 2 tablespoons fresh dill, chopped
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 3 cups chopped lettuce
- 1 cup chopped tomatoes
- 1 cup chopped cucumber
- 1/2 cup sliced red onion
- 1/3 cup Kalamata olives
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and black pepper to taste
- Extra fresh herbs for garnish
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- In a large bowl, combine ground beef, garlic, onion, breadcrumbs, baking soda, parsley, mint, olive oil, salt, and pepper. Mix until just combined.
- Cover and refrigerate for 30 minutes to help tenderize the mixture.
- Form into small meatballs and place on the prepared baking sheet. Bake for 18 to 22 minutes until browned and cooked through. Ground beef should reach 160°F for safe consumption.
- Toss potato wedges with olive oil, salt, paprika, cumin, oregano, and pepper. Spread on a separate baking sheet.
- Roast potatoes for 35 to 40 minutes, flipping halfway, until golden and crispy.
- In a bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, olive oil, and salt. Chill until ready to use.
- In another bowl, combine lettuce, tomatoes, cucumber, red onion, and olives. Toss with olive oil, lemon juice, salt, and pepper.
- Assemble bowls by layering salad, roasted potatoes, and meatballs.
- Top with a generous spoon of tzatziki and sprinkle with fresh herbs before serving.
