Description
This easy English muffin bread has the classic nooks and crannies you love and bakes into one simple loaf perfect for toasting.
Ingredients
- 2 1/2 cups all purpose flour
- 1 tablespoon granulated sugar
- 1 1/4 teaspoons fine salt
- 1/4 teaspoon baking soda
- 2 1/4 teaspoons instant yeast
- 1 cup milk
- 1/4 cup water
- 2 tablespoons vegetable oil
- Cornmeal for coating the pan
Instructions
- Combine 2 cups of the flour, sugar, salt, baking soda, and instant yeast in a large bowl. Stir well.
- Heat the milk, water, and oil in a microwave safe measuring cup until very warm but not hot to the touch.
- Pour the warm liquid into the dry ingredients and stir until combined. The mixture will be thick and sticky.
- Add the remaining flour gradually until a very soft, sticky dough forms.
- Grease an 8 by 4 inch loaf pan and coat the bottom and sides generously with cornmeal.
- Spoon the dough into the prepared pan and smooth the top with a lightly greased spatula.
- Cover loosely and let rise in a warm place for 45 minutes to 1 hour, until the dough just crests the rim of the pan.
- Preheat the oven to 400°F.
- Bake the bread for 22 to 27 minutes until golden brown and the top sounds hollow when tapped.
- Cool in the pan for 5 minutes, then remove and cool completely on a wire rack before slicing.
Notes
- Toast slices for the best texture and serve with butter or jam.
